A favorite drink of mine is the Classic Daiquiri, but I've just about given up trying to order it. Just the fact that it now needs to be called "Classic" highlights the problem.

If you try to order a frozen daiquiri, you'll more likely than not be asked if you mean a strawberry daiquiri. If you say no, most bartenders will be at a loss. Or they'll pretend to be. You can still order a margarita, and they'll ask if you want it frozen or on the rocks, but for some reason everyone has selective amnesia when it comes to fixing a daiquiri. And it's a sad state of affairs, I'll tell you.

A real actual daiquiri is just rum, lime juice and sugar syrup, chilled in a shaker. It tastes like Baskin & Robbins' Daiquiri Ice, therefore a frozen daiquiri should taste just that much more like Baskin & Robbins' Daiquiri Ice, seeing as it's frozen and all.

My husband's favorite Baskin-Robbins item is the Daiquiri Ice. Unfortunately, the last time we were there, we learned that the recipe had changed. It is now LIME Daiquiri ice, and has a LOT more lime flavor, and is WAY too tart.

The recipe below is pretty close to the original Daiquiri Ice. It is a very refreshing dessert for a hot summer day.

Hope whoever reads this tries it and enjoys it.

HOME CLONE VERSION OF BASKIN-ROBBINS DAIQUIRI ICE
(this is NOT Lime Daiquiri Ice)

2 cups water
1 cup sugar
Juice of 1 lime
1 tsp imitation rum extract
1 tsp citric acid powder - you may need to look for this, but it is a necessary ingredient
1 drop green food coloring

Heat sugar and water just until sugar melts. Remove from heat and add citric acid. Stir until dissolved. Let mixture cool until lukewarm, then add rum extract, lime juice and food coloring. Refrigerate until chilled. Churn in an ice cream machine for 25 minutes. Spoon ice into freezer-safe bowl, and move to the freezer for an hour before serving.

Note: The recipe only makes a little over 2 cups, so you may want to double the ingredients.

You wouldn't know it from its present state, but the daiquiri was once a pretty ballsy drink. Of course, that was before it got tarted up with strawberries, bananas, kiwis, rhubarb (really--google it yourself), and whatnot, drowned in gallons of crushed ice, and extruded from a machine. Used to be a daiquiri was just a healthy shot of white rum plus half a lime squeezed right into a cocktail shaker (no machine) and just enough sugar to take the sour edge off. Nothing to it. that's how JFK and Hemingway liked 'em, and they weren't wrong.

We bring this up because you're gonna be seeing a lot of the daiquiri. It's the classic white-rum cocktail, and the booze industry has decided that white rum is the next vodka. This isn't a bad thing; the established brands could use some competition. Judging from a recent blind tasting in which we took six new premium white rums, daiquirized them, and poured them for our expert panel, there's gonna be a hell of a rumble. Our Favorites: 10 Cane (Trinidad; $35). Spectacular--smooth, rich, plenty of funky sugarcane flavor. Clément Première Canne (Martinique; $25). As above, although a little leaner.
